How to Carve a Whole Duck

Method

Step 1

Rest duck for minimum 20 minutes.

Step 2

Hold duck in centre of the breast with carving knife.

Step 3

Cut between the breast and the leg.

Step 4

Pull leg away and snap off at the thigh joint.

Step 5

Slice along breastbones over the ribcage.

Step 6

Lift the breast away. Slice into portions. Serve!
