METHOD

  • Rest duck for minumum 20 minutes.
  • Hold duck in centre of the breast with carving knife. 

  • Cut between the breast and the leg.
  • Pull leg away and snap off at the thigh joint.
  • Slice along breastbones over the ribcage.

  • Lift the breast away.
  • Slice into portions.
  • Serve!
